This soup is fantastic! Spicy, wholesome, tasty, and easy to make!
2 whole chicken legs (with bones - legs plus thighs)
1 yellow onion, chopped
1 green zucchini, quartered, then in thin slices
1 carrot, chopped in small pieces
2 yellow potatoes, in chunks, skin on
1 tomato, chopped
1 portion of couscous, cooked
1 tsp cayenne pepper
1 tsp cumin
1 tsp lemon juice
Salt, pepper - to taste
2 cups water, plus more as needed
Place chicken, onion, water, salt, pepper and lemon juice in a big pot over high heat. Boil until chicken is cooked.
Cook couscous separately - Put 1 cup of dried couscous in a bowl, add a pinch of salt, cover with 1 cup boiling water. Let sit until water is absorbed - fluff with fork. Set aside.
Add all vegetables and cayenne and cumin to chicken pot, and cook until vegetables are soft. Add water as needed. Once done, remove chicken bones. Add salt and pepper to taste.
To serve, place a scoop of couscous in each bowl. Scoop soup on top. Voila!
