Mole is one of my favorite Mexican sauces! It is a great complex and tasty flavor, achieved through spices and chocolate!
1 container of Mole sauce (pre-made or fresh if you are lucky!)
2 Chicken breasts
1 yellow onion, sliced
1 TB olive oil
Water
Dark chocolate
Salt & pepper
Heat olive oil in a pan. When hot add chicken and onions. Sprinkle salt and pepper on top. When the first side is browned, turn over. Once that side is browned, add water.
Keep adding more water for a few hours until the chicken is shredded.
Hint: Once chicken is soft enough use a fork to help shredding.
Add mole sauce. Add chocolate squares as needed for flavor.
Serve in warm corn tortillas, with sour cream. Chopped white onion and avocado.
