This is highly delicious and perfect with couscous (squeeze some lemon and grind fresh pepper over the couscous when you serve it). I suggest serving with wilted spinach and spicy chickpeas.
cumin (2 tsp)
cinnamon (1/2 tsp)
paprika (1/2 tsp)
cayenne pepper (2 tsp)
freshly ground pepper
sea salt (1/2 tsp)
olive oil (about 1/2 cup)
juice of one lemon
1 small piece of ginger (grated to make about 1 tsp)
1 medium yellow onion (grated)
chopped fresh parsley
chopped fresh cilantro
Coat any type of lamb meat and let sit 2 hours. If chops, broil for 5-8 minutes each side. You can also cut into chunks, place on skewers, and bbq until done. A leg can be cooked in the oven. Baste with marinade half way through cooking.
