Recipe: Fabulous Vinaigrette Salad Dressing

It is so easy to make your own salad dressings!! You can make a variety of different dressings easily depending on your mood, by just having a few key good quality ingredients on hand.

-Olive oil (extra-Virgin, experiment with oils from different places, like Italy, Spain and Portugal)
-or another kind of oil for something more exotic (sesame oil, avocado oil, grape seed oil, or a variety of nut oils)
-salt (experiment with different kinds, sea salt, Fleur de sel, or more exotic types like smoked or volcanic or pink!)
-fresh citrus juice (squeeze fresh lemons, limes, oranges, blood oranges - even try a combination)
-vinegar (try different kinds such as balsamic, red wine, white wine, regular white, fig or raspberry)
-mustard (if desired, try Dijon or with whole seeds)
-fresh ground pepper (black, white, multi-colored peppercorns)
-shallot (small piece, diced)
-fresh herbs (small amount, chopped - like rosemary, or thyme for a marinade)

Mix together in a small bowl using a fork with a ratio of 2/3 oil to 1/3 acid (citrus & vinegar combined). Use only a spoonful of mustard, a pinch of salt, and pepper to taste. Feel free to add some fresh chopped herbs and shallots if desired.

You will love these homemade dressings on all your salads! They can also be used as marinades for meat including chicken, beef and fish.

Hint: You can combine all of the ingredients in a leftover jar, and just shake to mix! Then you can keep this in your refridgerator an pour from there when you want to use the dressing.
